ingredients

ap flour :750g (6 cups)
water :~300ml
salt :14-15g
yeast :14-15g
honey :5g
herbs (optional) :rosemary, thyme, cracked black pepper, mint(?)
oats (optional) :just a handfull
oil :DO NOT

- i don't care if you have depression, girl, just knead some dough! - beat the shit outta it for like 6-10 mins - let rise for ~2hr, knead again for 6-10 mins, - let rise for another hour or so, transfer to baking tray/dish/pan, - then let rise again in a warm place for 20-30mins - don't go over this! set a timer. this final rise is the most crucial!! - (optional): brush on melted butter or eggwash or w/e, for fancy - put into 170'C oven for 30-45min - (add a splash of hot water to oven basin after you check on it at about the 20 min mark: the steam makes the crust extra crispy)

instructions

1 . add the salt, yeast, honey, and water (in that order) to a measuring jug and stir, then let sit for a few minutes
2 . measure out the flour into a mixing bowl, and add the yeast water mixture once it's frothy
3 . start mixing with a wooden spoon, then transfer to clean hands when the dough is 'shaggy', and start kneading against the bottom of the bowl for 6-10 minutes. pro tip: wash your hands with oats or flour to get all the bits incorporated
4 . then let it rest in the bowl for another 6-10 minutes (don't forget about it)!
5 . come back and knead it again, this time on a clean work surface, and really start slammin' it. beat the crap outta that thang! girl, idk if you have depression, knead this dough! it feels good, i promise x [go at it for another 6-10 minutes] (or just use a stand-mixer)
6 . put it back in the bowl, let it rise for ~2 hours, then time for round 3 *ding ding* [6-10 minutes] (beat until round)
7 . select your baking vessel: steel dish, standard baking tray, dutch oven, iron pan
8 . dust the vessel with flour and/or oats, then place the beautiful nice soft round smooth pillow of dough into it and give it a kiss and a pat on the head for being such a good girl
9 . turn oven on to 170'C [340'F] and set a timer for 25 minutes. Don't go overtime: it'll die! (seriously, if you wait too long now the air inside all the bubbles will burst and the bread will deflate. you might be able to save it with a re-kneading, but it's risky)
10 . put it in oven for 30-45 minutes, but check her every 10-15 mins.
11 . half-way through add a big splash of hot tap water to the basin of your oven, it will make the bread steam-baked! like a sauna
12 . take out when it looks done and knock on the top, if it's got a good sound then she's done
13 . wait for it...
14 . I SAID WAIT!
15 . [30 minutes] (the steam is reabsorbed, changing the bread dna into *good bread* dna)
16 . devour
