sweet potato gnocchi + pea sauce

tbh i have no idea what to call this. pea sauce doesn't sound very appetizing but i guess that's what it is? it's pretty yummy. the gnocchi part is way easier than i thought it'd be tbh. i love gnocchi so this was very nice to discover. this is one of the few mara recipes that isn't vegan. you have meri to blame for that :p. we've never tried subbing the heavy cream for something else but i have a hunch that if you used full-fat coconut milk instead it could be ok. i also wanted to use this recipe to show off the new sections feature... i hope this is informative :3 this recipe serves two! munch down w/ someone you love. ... or someone that hates you and maybe you'll get along better after eating yummy together

ingredients

sweet potato :1 lb
flour :1 cup (plus a little extra)
salt :to taste
rosemary :to taste
cilantro :to taste
vegan butter :enough to coat a pan

you could probably use normal potatoes instead of sweet potatoes but i like sweet potatoes so thats what i use :3

instructions

1 . for the gnocchi, start by cutting the potato into chunks and boiling them until soft. then, i douse them in cold water and pull the peels off
2 . at this point, you'll want to mash/food process the potato until you have a thick goop
3 . add the flour and a bit of salt, then mix until fully combined
4 . flour a working surface and plop your gnocchi-dough down. tear off pieces of the dough into gnocchi-sized balls and roll them in the flour until they have a nice thin coating. place the finished ones on another plate
5 . boil more water and drop the finished gnocchi in. when they float, they're ready! in the meantime, heat up a pan to medium heat and coat it with some vegan butter (i like the stick kind)
6 . when the gnocchi are done boiling, toss them in the pan and mix them around in the butter. season with salt, rosemary, and cilantro. when they start to get a little brown
7 . blend/mash/process the sauce mix til nice and thick. add salt and pepper to taste. if you like it a little thinner you can add some warm water
8 . pour some sauce over a bowl of gnocchi and sprinkle your breadcrumbs if you have them. enjoy!!
