this is really more like a cookie template than a recipe in and of itself. this batch makes about 6-7 decently sized cookies. you can double if you want more, but i usually make this amount to test new flavors (and save money on ingredients lol). in general, put in a 1/4 cup of whatever flavor (ex: peanut butter, matcha, choc chips, red bean paste> you like, and then add a little sugar or flour to even out the texture to your liking. for the vegan butter, i like the stick kind much more than the spreadable kind. if the butter is too soft/warm, the texture of the cookies will be off. similarly, you can sub normal sugar for the brown sugar (or even do a mix of both!> to change the texture. brown sugar will be more soft, and white sugar a bit more .. crispy? . idk how to describe. but if you use white sugar be sure and use baking powder instead of baking soda, since the baking soda requires the molasses in the brown sugar to make rising happen.

ingredients

flour :1/2 cup
vegan butter (room temperature> :1/4 cup
brown sugar :1/2 cup
baking soda :about 1/3 tsp
vanilla extract :1/2 tsp

instructions

1 . preheat oven to 350F. set out a greased baking sheet
2 . mix butter and brown sugar together until a cream forms.
3 . add flour, baking soda, vanilla extract. mix until it feels like cookie dough and is easy to shape into balls. it shouldn't stick to your fingers too much
4 . form into balls and press slightly into the baking sheet to give a sort of little disc.
5 . bake for 10 minutes
6 . let cool and enjoy!!
